Good morning to you! 

“It sells better that way.”

Those were the sarcastic words a co-worker used to tell me at lunch each time I would comment that the food was hot. Funny. Meanwhile, I continue to feel certain foods do exist that should never be served cold. I know this because I have made the mistake of trying them that way.

Some foods are perfectly acceptable hot or cold. Pizza, for example, can survive the transition. I have eaten it straight from the refrigerator the next morning, standing barefoot in the kitchen, and felt no shame. In fact, cold pizza may be one of the reasons refrigerators were invented. But other foods? Absolutely not.

Take mashed potatoes. Hot mashed potatoes are one of life’s great comforts. They are warm, creamy and soft, especially when covered with gravy. Cold mashed potatoes, however, become a pale, lumpy substance that looks like it was left behind after a minor construction project.

Macaroni and cheese belongs in this category, too. When it is hot, macaroni and cheese is a food group of its own. When it gets cold, the cheese stiffens and the noodles stick together like they have formed a union and gone on strike.

And then there is chili. Hot chili on a cold day is nearly perfect. It warms your hands through the bowl and your soul through the first spoonful. Cold chili, on the other hand, is bean-based punishment. I once ate leftover chili cold because I was in a hurry. That was not a meal. It was a cry for help.

Spaghetti is another food that should be hot. I realize some people eat cold spaghetti salad. That’s different. I am talking about regular spaghetti with sauce. Hot, it is delicious. Cold, the noodles become strangely firm, and the sauce loses its magic.

Then there is gravy. Nobody has ever looked at a bowl of cold gravy and said, “You know what? That looks fantastic.” Hot gravy is smooth, savory and capable of rescuing otherwise mediocre food. Cold gravy turns into a gelatinous blob that makes you question whether you are eating dinner or examining a science experiment.

Corn on the cob should also be hot. Cold corn is not terrible, but it has the personality of a person who refuses to make eye contact in an elevator.

And soup? Please. Soup is supposed to be hot enough to require a brief warning before the first spoonful. Cold soup is a salad that has given up.

I suppose there are exceptions. Ice cream is certainly better cold. Cereal should probably remain cold. But for most comfort foods, temperature matters. Because some foods are not merely ingredients. They are experiences. And when mashed potatoes, macaroni and cheese, chili, spaghetti or gravy get cold, they do not simply lose heat. They lose their reason for being.

Institutional news
Des Moines Public Schools will provide free breakfast and lunch to every student during the 2026-27 school year through the USDA's Community Eligibility Provision program. The district has participated in the program for several years, covering all 30,000-plus students regardless of household income.

The Des Moines City Council approved preliminary terms for a $48 million conversion of the former Wells Fargo Tower at 206 Eighth St. into a 157-room Marriott Le Meridien hotel.

The Great Outdoors Foundation unveiled its Watershed26 Shared Action Plan following "a summit on water quality at the convergence of agriculture and conservation." The plan focuses on: emerging voices, finance solutions, science and data and stacked benefits. The goal is reducing nitrate levels in Iowa's waterways. (USA Today)

Waukee's Planning and Zoning Commission approved a site plan for a 182,000-square-foot Walmart Supercenter at 1165 E. Hickman Road, east of Hy-Vee.

The city of Des Moines and ICON Water Trails received $2 million in federal funding for improvements at Birdland Park and Prospect Park.

Buc-ees is proposing a 74,000-square-foot store, similar size as their largest locations, near the I-80/35 interchange at 100th Street and Northpark Drive on a 20-acre bean field previously owned by former Des Moines Mayor Frank Cownie. The Urbandale Planning and Zoning Commission approved a comprehensive plan amendment to move the project forward.
